Holiday Traditions With a Healthy Twist

On the season finale of our SCULPT Vlog, we are creating a healthy twist on a holiday favorite. We also demonstrate how to combine previous dishes from past SCULPT episodes to create a fun and exciting choices for families during the Holidays. SCULPT is a partnership with Jasmine Simone from Of Salt and Soil where the intersection of healthy eating and budget friendly options are explored.
 

 
 

RECIPE: Herbed Quinoa Stuffed Savory Stuffed Sweet Potatoes with Basil Aioli

 

Ingredients

  • 4 sweet potatoes
  • 2 tsp grapeseed oil
  • 1 cup cooked Quinoa
  • 3¼ cup broth (from September Recipe, Build Your Own Broth)
  • 1 leek diced
  • 1 shallot diced
  • 3 cups mushrooms
  • 1 tsp fresh rosemary
  • 1/2 tsp sea salt
  • 1 tsp black pepper

 
Basic aioli

  • ½ cup plant-based mayo
  • 1 cup fresh basil

 
Method

  • Pre-heat oven to 425 degrees F
  • Cut Sweet Potato in half and bake in oven at 325 degrees F for 25 minutes (or until tender and fully cooked)
  • Heat skillet on medium heat and add grapeseed oil
  • Chop leeks and shallots and sauté in skillet
  • Dice mushrooms, leeks and shallots and add to skillet
  • Prepare Quinoa with broth (according to package directions)
  • Use previously made greens (see Holiday Greens recipe) and mix with cooked quinoa
  • Add sea salt and pepper to taste
  • Basil aioli: Mix mayo and chopped fresh basil in separate bowl
  • Remove cooked sweet potato from oven, set on plate, and use a spoon to scoop out a little flesh from center of each of the halves.
  • Add mixture of quinoa, greens, to center of the sweet potatoes
  • Dollop Basil Aioli mixture on top
  • Place a few sprigs of Rosemary on top to garnish (optional)
